Every parent wants their kids to be at least a little polite, so we've been encouraging Abby to say please, thank you, and excuse me, at appropriate times. She does pretty well. Only... her excuse me sound very much like 'It's music'. It's so hard not to burst out laughing when I hear her pass major gas and then cheerfully say "It's music, mama! It's music!"

Baking Cookies
Thursday, March 5, 2009
I've been meaning to create this post for quite a while now. There is a particularly tasty (and large!!!) cookie recipe given to me by a friend that Abby really enjoys making as it involves lots and lots of measuring and lots of sneaking nuts and coconut while mom isn't looking. :) As you can see the dough is almost overflowing in my mixer and the cookies are huge! They really are pretty healthy though and are more of a breakfast bar cookie that is great for a snack.
Tracey's Protein Cookies (but my way... )
1 cup butter
2 cups peanut butter
2 2/3 cups packed brown sugar
4 teaspoons vanilla
4 eggs
2/3 cup milk
2 cups whiteflour
2 cups whole wheat flour
4 cups quick oats
1 cup wheat germ
2 teaspoon cinnamon
4 teaspoon baking soda
2 cups chopped nuts - (I use any combination of pecan pieces, chopped walnuts, sliced almonds, and sunflower seeds)
1 cup shredded coconut
1/2 -1 cup ground flax seeds
Preheat oven to 350
Beat butter, peanut butter, packed brown sugar and vanilla in large bowl. Beat in eggs and milk
Mix flours, oats, wheat germ, cinnamon, and baking soda.
Stir in nuts and flax seed
Drop by icecream scoopfuls 2 1/2 inches apart and flatten slightly.
Bake for 18 minutes.
Cool on sheet for 2 minutes then cook on wire rack. Freeze in pairs in sandwich size ziploc bags.
